Chocolate Profiteroles
A delicious dessert recipe from
South Coast Winery's very own Vineyard Rose server, Tina B.

1 stick Butter
1 cup Water
Pinch Salt
Pinch Sugar
1 cup Flour
4 Eggs, room temperature
Vanilla Ice Cream

1. Preheat oven to 400°F. In a saucepan, heat butter, water, salt, and sugar over medium to high heat until it boils.

2. When the boiling begins, add flour all at once. Mix and cook for 1 - 2 minutes over very low heat.

3. Take off heat and add eggs one at a time. Mix.

4. Place in tablespoon size dollops on an ungreased cookie sheet. Bake for 20 minutes. Then turn heat to 350°F for 20-25 more minutes. Bake until golden brown.

5. Cool on wire rack. When cool, slice open each profiterole and fill with vanilla ice cream. Place in freezer until ready to eat.

Chocolate Sauce:
1 tbls Butter
1 oz. Bittersweet Chocolate
1 cup Powdered Sugar
Hot Water

1. In a small saucepan, melt butter and chocolate over low heat.

2. Add powdered sugar. Whisk.

3. Stir in hot water, pouring in 1/2 tsp at a time until smooth.

4. Pour over profiteroles and serve. Pair with South Coast Winery's Black Jack Port

Wild Women of Wine Country Homestyle Cooking Class
Saturday, April 4th

Owner Maggie Carter has challenged General Manager Frances Packham & Director of Marketing Crystal Magon to a cook off, with the winemakers, to bring you a fun-filled day learning their hot little tips and specialty secrets for fine homestyle cooking. Spring BBQ Wine Country Celebration - Blessing of the Vines

Wild Women of Wine Country 5K Walk-Run Thru the Vineyards
Saturday, May 2nd
The course takes you strolling (or running) through the pristine vineyards of South Coast Winery, the new and upcoming Carter Estate Vineyards, and on to Falkner Winery before heading back to South Coast Winery Resort & Spa for a celebration, where music and refreshments await you. The first 750 registered participants will receive a commemorative T-shirt. Best of all, 100% of proceeds will help uninsured women and their families receive the much needed care and attention they deserve in screening for and coping with the effects of breast cancer.
