7. Tomato Soup From Childhood Memories
As the cool Fall weather ascends, the time outdoors grows shorter and instantly sets the tone for gathering friends and family together for sharing meals and laughter. It is with this in mind that I decided to share one of my favorite recipes with you, so you can share it with your family. A classic number one seller of Campbell’s Soup, Tomato Soup has always held a high regard from my childhood memories. Now that I am matured in the aspects of the kitchen, the soup is made from scratch and local produce, but the use of potato chips as a "cracker texture"still remains. Bon Appétit!

Chef Dean A. Thomas CEC CCE YIELD: 6 servings

•1 (14-ounce) can whole plum tomatoes
•3/4 cup extra virgin olive oil
•Salt and freshly ground black pepper
•1 stalk celery, diced
•1 small carrot, diced
•1 yellow onion, diced
•2 cloves garlic, minced
•1 cup chicken broth
•1 bay leaf
•2 tablespoons butter
•1/4 cup chopped fresh basil leaves
•1/2 cup heavy cream
•Home–Fried Potato Chips

Directions:
Preheat oven to 450 degrees F. Strain the canned tomatoes, reserving the juices, and spread onto a baking sheet. Season with salt and pepper, to taste. Drizzle with 1/4 cup of the olive oil and roast until caramelized, about 15 minutes. Meanwhile, in a saucepan, heat remaining olive oil over medium-low heat. Add the celery, carrot, onion and garlic. Cook until softened, about 10 minutes. Add the roasted chopped canned tomatoes, reserved tomato juices, chicken broth, bay leaf and butter. Simmer until vegetables are very tender, about 15 to 20 minutes. Add basil and cream. Puree with a hand held immersion blender until smooth. Garnish with home-fried Potato chips for the crunch texture and flavor. Pairs great with a grilled cheese sandwich and our 2008 South Coast Winery Chardonnay San Chené or our 2007 South Coast Winery Estate Fumé.
